Everyone loves pancakes for breakfast, so for a healthier twist on an old favourite give our blueberry and banana oat pancakes a try.

Ingredients
150goats
150mlsemi-skimmed milk
1largebanana
15gblueberries
1tspsunflower oil
Instructions
Place the oats, milk, banana and blueberries (saving a couple of slices of banana and a couple of blueberries aside to serve) in a food processor and whizz up until smooth.
Heat a teaspoon of oil in a non stick frying pan over a high heat.
Add a tablespoon of pancake batter to one side of the pan, and same again on the other side to form two small pancakes.
Once the pancakes start to bubble on top, it’s time to flip! When golden on both sides, remove and repeat with remaining batter to give you four small pancakes.
Serve with the remaining blueberries and sliced banana.
Notes
Tips and tweaks: Try topping with peanut butter, crushed nuts or chopped dates. Yum!
