Banana and blueberry oat pancakes
Everyone loves pancakes for breakfast, so for a healthier twist on an old favourite give our blueberry and banana oat pancakes a try.

Ingredients
- 150 g oats
- 150 ml semi-skimmed milk
- 1 large banana
- 15 g blueberries
- 1 tsp sunflower oil
Instructions
- Place the oats, milk, banana and blueberries (saving a couple of slices of banana and a couple of blueberries aside to serve) in a food processor and whizz up until smooth.
- Heat a teaspoon of oil in a non stick frying pan over a high heat.
- Add a tablespoon of pancake batter to one side of the pan, and same again on the other side to form two small pancakes.
- Once the pancakes start to bubble on top, it’s time to flip! When golden on both sides, remove and repeat with remaining batter to give you four small pancakes.
- Serve with the remaining blueberries and sliced banana.
Notes
Tips and tweaks: Try topping with peanut butter, crushed nuts or chopped dates. Yum!
