Banana and blueberry oat pancakes

These tasty pancakes are full of fibre and satisfyingly sweet making them a great start to your day if you like a sweet breakfast.

Banana and blueberry oat pancakes

Everyone loves pancakes for breakfast, so for a healthier twist on an old favourite give our blueberry and banana oat pancakes a try.

Ingredients

  • 150 g oats
  • 150 ml semi-skimmed milk
  • 1 large banana
  • 15 g blueberries
  • 1 tsp sunflower oil

Instructions

  • Place the oats, milk, banana and blueberries (saving a couple of slices of banana and a couple of blueberries aside to serve) in a food processor and whizz up until smooth. 
  • Heat a teaspoon of oil in a non stick frying pan over a high heat. 
  • Add a tablespoon of pancake batter to one side of the pan, and same again on the other side to form two small pancakes.
  • Once the pancakes start to bubble on top, it’s time to flip! When golden on both sides, remove and repeat with remaining batter to give you four small pancakes.
  • Serve with the remaining blueberries and sliced banana.

Notes

Tips and tweaks: Try topping with peanut butter, crushed nuts or chopped dates. Yum!
